  PACINA Vin Santo
There isn’t a purest Vin Santo made in Tuscany today than the tiny quantity made in the attic of the ancient farmhouse headquarter of Villa Pacina, the most biologically sound and organically committed estate we know. Seven or eight small barrels of this sweet wine are left for five years to mature and evolve naturally until they yield the unctuous amber  nectar. For after dinner, and not just with dessert.
